Chilli & Coriander Hummus

Ingredients:

  • 2 x Tins cooked chick peas
  • 2 x Tablespoons of Tahini paste
  • 2 x Cloves of garlic
  • 3/4 Squeezed lemon juice
  • Sea salt
  • Few glugs of extra virgin olive oil
  • Water to loosen as required
  • 3 Coriander stalks
  • Half or a full red chilli (depending on how hot you want it)
  • Coriander leaves
  • Raw veg to dip

Instructions:

Rinse the chick peas in cold water (to rinse the salty water off), put in a blender and add in Tahini paste, sea salt, lemon juice and garlic and blend while slowly adding in the olive oil and water until you reach the desired consistency, chop 3 coriander stalks and add to the mix along with the roughly chopped chilli, chop the coriander leaves until fine and add to the mix, slowly blend. This is delicious with carrot sticks, cucumber or raw broccoli.
