Delicious Coconut & Raspberry Chocolate Chip Muffins

So these little babies were half on purpose half kind of what’s left in my cupboard that can be transformed into something cheekily healthyish- well better than store bought anyways!

SO here goes- note I used a big mug instead of a cup and extra large eggs opposed to medium eggs and I’m VERY heavy handed with ingredients 🙂

1/2 cup coconut flour

1/2 cup coconut oil

3/4 tsp vanilla essence

1/2 cup of shredded coconut

1/3 cup of Xylitol or coconut sugar or granulated stevia

Pinch of sea salt

3 large eggs

1/2 tsp baking powder

Some dark chocolate broken into little pieces- 85% cocoa

1/2 cup of raspberries- frozen works best

Splash of almond milk

 

Method:

1. Mix together the eggs, coconut oil, sweetener, salt and vanilla essence.

2. Add in the coconut flour with the baking powder removing any lumps by whisking quickly into a smooth batter. Add in the raspberries and chunks of chocolate.

3. Bake at 180c for about 25-30 minutes until your skewer comes out clean.

Mine made 8 muffins

  1. Hi! Could you tell me where you get your coconut flour etc.? I have searched high and low (in Longford and Westmeath anyways) and i cannot find it anywhere!
