So, generally when you think of brownies you think blood sugar levels spiking and deliciousness on a plate, served hot and gooey with some freshly whipped cream, followed by guilty pangs post-devour.
Well, I have a DELICIOUSLY clean dark chocolate brownie recipe that might just tick all the right boxes- tasty, fibre rich and relatively low in nasties!
Ingredients
5tbsp organic unsalted butter
185g dark chocolate- I used 85%
150g almond meal
50-60g xylitol or honey
2 tbsp raw cacao nibs
2 large eggs
1 tsp vanilla
1/2 tsp cinnamon
1/2 tsp pink sea salt
1 1/2 tbsp orange zest
Method
Preheat your oven to 180.
Melt the butter and chocolate together.
Add in the almond meal, honey, raw cacao nibs, eggs, vanilla, cinnamon, salt and orange zest. Whisk together fully.
Pour into a well-oiled and lined baking tray.
Bake for 30-35 mins and use a fork to check if ready- fork should come out clean.
Remove form oven and- if you’ve got more patience than me- leave to cool!
Serve with some natural flavour Greek Yoghurt or some Coconut yoghurt and garnish with grated orange peel.
